Healthy Breakfast Curry

A flavorful and nutritious breakfast curry made with vegetables, spices, and coconut milk for a perfect energy-packed start to your day.

Ingredients

  • 1 cup diced vegetables (cabbage, carrots, bell peppers)
  • ½ cup cooked lentils or chickpeas
  • 1 tsp turmeric
  • ½ tsp cumin seeds
  • ½ tsp garam masala
  • 1 cup coconut milk
  • 1 tbsp olive oil
  • Salt to taste

Instructions

  1. Heat olive oil in a pan and add cumin seeds.
  2. Sauté chopped vegetables for 5 minutes.
  3. Add turmeric, garam masala, and salt. Stir well.
  4. Pour in coconut milk and simmer for 10 minutes.
  5. Add cooked lentils and let it thicken.
