  • 2 cups chocolate cookie crumbs
  • ¼ cup melted butter
  • 3 (8 oz) packages of cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup sour cream
  • ½ cup heavy cream
  • 1 cup fresh strawberries, blended into a purée
  • 2 tablespoons sugar
  • 1 teaspoon cornstarch
  • 1 tablespoon water
  • ½ cup semi-sweet chocolate chips, melted
  • 2 tablespoons heavy cream

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Mix chocolate cookie crumbs with melted butter and press into a 9-inch springform pan.
  3. Bake for 10 minutes, then set aside to cool.
  4. In a saucepan, combine strawberry purée, sugar, and cornstarch. Stir over medium heat until thickened. Let cool.
  5. Beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well. Stir in vanilla, sour cream, and heavy cream.
  6. Pour half of cheesecake batter over the crust. Drizzle with strawberry sauce and melted chocolate. Swirl together with a toothpick.
  7. Repeat with remaining batter and toppings.
  8. Place the cheesecake in a water bath and bake for 50-60 minutes until the center is slightly jiggly.
  9. Turn off the oven and let cool inside for 1 hour.
  10. Refrigerate for at least 4 hours before serving.

Notes

Use room temperature ingredients for a smoother batter and don’t overmix to prevent cracking during baking.
