  • 2 ripe bananas, mashed

  • 1 ½ cups fresh or frozen blueberries

  • 2 cups rolled oats

  • 1 tsp baking powder

  • 1 tsp cinnamon

  • ½ tsp salt

  • 2 cups unsweetened almond milk (or any milk)

  • 1 tsp vanilla extract

  • 2 tbsp maple syrup or honey (optional)

  • 1 egg (or flax egg for vegan option)

  • 1 tbsp coconut oil or melted butter (optional)

Instructions

  • Preheat oven to 375°F (190°C). Lightly grease a baking dish (8×8-inch).

  • In a large bowl, mix oats, baking powder, cinnamon, and salt.

  • In another bowl, combine mashed bananas, milk, egg, vanilla, and maple syrup. Mix well.

  • Add wet mixture to the dry ingredients and stir to combine.

  • Fold in the blueberries gently.

  • Pour the mixture into the prepared dish and spread evenly.

  • Bake for 35–40 minutes until the top is golden and the oatmeal is set.

  • Let cool slightly before serving. Serve warm or chilled.

Notes

  • Use frozen blueberries straight from the freezer—no need to thaw.

  • Add chopped nuts or chocolate chips for extra texture.

  • Store leftovers in the fridge for up to 5 days or freeze for later.
