  • 3/4 cup erythritol or allulose
  • 1/2 cup coconut oil or unsalted butter
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1 cup sugar-free chocolate chips
  • 1/2 tsp salt
  • Optional: chopped walnuts or pecans

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine almond flour, erythritol, coconut oil, egg, vanilla extract, baking soda, and salt until well mixed.
  3. Fold in the sugar-free chocolate chips and any optional add-ins.
  4. Chill the dough in the refrigerator for at least 25 minutes.
  5. Scoop the dough onto a baking sheet, leaving space for spreading.
  6. Bake for 10-12 minutes until edges are lightly golden.
  7. Allow cookies to cool on the tray for a few minutes before transferring to a wire rack.
