  • 1/2 cup milk (dairy or almond)
  • 1 egg
  • 1 tablespoon melted butter or oil
  • 1 teaspoon vanilla extract
  • 3/4 cup blueberries (fresh or frozen)
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a mini muffin tray or use silicone cups.
  2. In a mixing bowl, whisk together pancake mix, milk, egg, melted butter, vanilla, and salt.
  3. Gently fold in blueberries, coating them in flour if desired.
  4. Spoon batter into each mini muffin cup, avoiding overfilling.
  5. Bake for about 12-14 minutes until golden edges and a soft, bouncy top are achieved.
  6. Cool for a few minutes before removing from the tray.
