Blueberry Pie Bars

Easy and delicious Blueberry Pie Bars featuring a buttery crust, jammy blueberries, and a sweet crumble topping – a perfect summer treat.

  • 2 cups fresh blueberries
  • 1 1/2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup salted butter, melted
  • 1 lemon, juiced
  • 1 large egg
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the crust ingredients and press half of it into a greased pan.
  3. Toss the blueberries with lemon juice and sugar, then layer them over the crust. Crumble the remaining crust on top.
  4. Bake for 30-35 minutes until golden and bubbly.
  5. Let cool before slicing.

Notes

Chill leftovers for an even more refreshing taste. Great for road trips and can be frozen for later enjoyment.
