Crispy German Potato Pancakes

Deliciously crispy German potato pancakes made healthier in an air fryer.

Ingredients

  • 4 medium potatoes (preferably starchy varieties like Russets)
  • 1 medium onion, finely grated
  • 2 large eggs
  • 1/4 cup flour (or potato starch for gluten-free)
  • Salt and pepper to taste
  • Oil spray for air frying

Instructions

  1. Peel and grate the potatoes. Soak in cold water for 10-15 minutes.
  2. Drain and squeeze out excess moisture from the potatoes.
  3. In a bowl, mix the grated potatoes, grated onion, eggs, flour, salt, and pepper.
  4. Shape the mixture into small, flat pancakes by hand.
  5. Preheat the air fryer to 375°F (190°C) and lightly spray the basket with oil.
  6. Place the pancakes in a single layer in the basket, leaving space between them.
  7. Cook for 10-12 minutes, flipping halfway through until golden and crispy.

Notes

Serve with applesauce or sour cream for an authentic experience. For added flavor, try incorporating garlic powder or fresh herbs.
