Keto Sugar-Free Carrot Cake

A delicious and guilt-free keto-friendly carrot cake made with almond flour and sweetened with keto sweeteners.

  • 2 cups almond flour
  • 1/2 cup keto sweetener (monk fruit, erythritol, etc.)
  • 1/2 cup full-fat Greek yogurt
  • 2 cups grated carrots
  • 3 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts (optional)
  • 1/4 cup unsweetened shredded coconut (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a cake pan.
  2. In a large bowl, mix together almond flour, keto sweetener, baking powder, cinnamon, and salt.
  3. In another bowl, whisk eggs and then add Greek yogurt and grated carrots.
  4. Combine the wet and dry ingredients and stir until well mixed.
  5. If using, fold in walnuts and shredded coconut.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake for 25-30 minutes or until a toothpick comes out clean.
  8. Let it cool before serving.

Notes

Feel free to adjust the level of sweetness to your preference. Frosting can be made with cream cheese and erythritol to keep it keto-friendly.
