This Healthy Blueberry Crisp is a guilt-free dessert bursting with juicy blueberries and topped with a golden, crunchy oat-almond topping. Naturally sweetened and made with wholesome ingredients, it’s perfect for breakfast or a light treat any time of the day.
For the filling:
4 cups fresh or frozen blueberries
2 tbsp maple syrup or honey
1 tbsp lemon juice
1 tbsp arrowroot powder or cornstarch
½ tsp cinnamon
For the topping:
1 cup rolled oats
½ cup almond flour
¼ cup chopped nuts (walnuts or pecans)
3 tbsp coconut oil or butter, melted
2 tbsp maple syrup or honey
½ tsp vanilla extract
Pinch of salt
Preheat oven to 350°F (175°C).
In a mixing bowl, combine blueberries, maple syrup, lemon juice, arrowroot powder, and cinnamon. Toss to coat evenly.
Pour the blueberry mixture into a greased 8×8-inch baking dish.
In another bowl, mix oats, almond flour, nuts, coconut oil, maple syrup, vanilla, and salt until crumbly.
