Healthy Blueberry Muffins

These healthy blueberry muffins are made with whole wheat flour and natural sweeteners, providing a guilt-free treat with every bite.

Ingredients

  • 1 cup rolled oats
  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • Pinch of salt
  • 2 eggs
  • 1/3 cup honey or pure maple syrup
  • 1/3 cup light olive oil or melted coconut oil
  • 3/4 cup milk (dairy or plant-based)
  • 1 teaspoon vanilla extract
  • 1 heaping cup fresh or frozen blueberries

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the dry ingredients: oats, whole wheat flour, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the eggs, honey or maple syrup, oil, and milk.
  4. Combine the wet ingredients into the dry ingredients and stir gently.
  5. Fold in the blueberries.
  6. Spoon the batter into lined muffin trays, filling each cup nearly to the top.
  7. Bake for 20-25 minutes, or until golden brown and a toothpick comes out clean.
  8. Let cool before serving.

Notes

Muffins are best enjoyed fresh but can be frozen for later. Use Greek yogurt or mashed banana as a substitute for oil if desired.
