Healthy Cheesy Beefy Burritos

Delicious and nutritious burritos made with lean beef and healthy ingredients, perfect for meal prep or a quick dinner.

Ingredients

  • 1 lb lean ground beef (93% lean)
  • 1 cup low-fat shredded cheese
  • 1 can black beans (rinsed and drained)
  • 1 cup chopped bell peppers
  • 1/2 cup diced onions
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 4 whole wheat tortillas
  • Fresh spinach, diced tomatoes, avocado (optional toppings)

Instructions

  1. In a skillet, sauté onions and peppers for 3–5 minutes.
  2. Add ground beef and cook until browned. Drain excess fat.
  3. Stir in spices, black beans, and a splash of water. Simmer for 5 minutes.
  4. Warm tortillas in a skillet or microwave.
  5. Spoon the beef mixture into each wrap, sprinkle cheese, and add fresh toppings.
  6. Fold and roll tightly. Serve warm or wrap for later.

Notes

For an extra kick, consider adding homemade pico de gallo or a dollop of Greek yogurt as toppings.
