Healthy Lemon Blueberry Yogurt Scones

Delicious and moist scones made with Greek yogurt, blueberries, and lemon zest, providing a healthy twist to a classic treat.

  • 2 cups all-purpose or whole wheat flour
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup Greek yogurt
  • 3 tablespoons honey or maple syrup
  • 1 tablespoon coconut oil (solid) or unsalted butter
  • 1 cup fresh or frozen blueberries
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In another bowl, combine yogurt, honey, coconut oil, lemon zest, lemon juice, and vanilla extract.
  4. Gently add the wet mixture into the dry ingredients. Stir until just combined.
  5. Toss blueberries with a little flour, then gently fold them into the dough.
  6. Turn dough out onto a floured surface, and shape it lightly into a disc about 1-inch thick.
  7. Cut into 8 triangles and arrange them on the prepared baking sheet.
  8. Bake for 15–18 minutes or until golden brown.
  9. Let cool slightly, then serve and enjoy!

Notes

For best results, keep ingredients cold and handle the dough gently. Store in an airtight container.
