A simple and delicious sheet pan dinner featuring kielbasa and sweet potatoes, roasted with a honey garlic glaze for maximum flavor and minimal cleanup.

  • 2 medium sweet potatoes
  • 1/4 cup honey
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt, to taste
  • Pepper, to taste
  • Optional: assorted quick-roasting vegetables like bell peppers, red onions, or broccoli

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Line a sheet pan with parchment paper or lightly oil it.
  3. Chop kielbasa and sweet potatoes into bite-sized pieces.
  4. In a bowl, toss kielbasa and sweet potatoes with honey, garlic, olive oil, salt, and pepper.
  5. Spread the mixture evenly on the prepared sheet pan without overcrowding.
  6. Roast in the oven for about 25 minutes, shaking the pan halfway through for even cooking.
  7. Serve warm, drizzled with additional honey if desired.
