  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • ½ cup pistachios, finely chopped
  • 2 tablespoons panko breadcrumbs
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • 1 tablespoon melted butter

Instructions

  1. Preheat the Oven: Set your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Prepare the Halibut: Pat the halibut fillets dry with a paper towel. Brush lightly with olive oil, then coat with Dijon mustard and lemon juice.
  3. Make the Pistachio Crust: In a small bowl, combine pistachios, panko breadcrumbs, garlic powder, paprika, salt, and melted butter. Mix well.
  4. Coat the Halibut: Press the pistachio mixture onto the top of each fillet for even coating.
  5. Bake: Place fillets on the baking sheet and bake for 12-15 minutes, until the crust is golden and the fish flakes easily with a fork.
  6. Serve: Plate with roasted broccolini and a lemon wedge.

Notes

For an extra crispy texture, broil the fish for the last 2 minutes of cooking.
