Honey Chipotle Shrimp Bowl

A mouthwatering fusion of smoky chipotle, sweet honey glaze, and zesty seasonings perfect for a quick weeknight dinner or an impressive meal for guests.

  • 1 lb large shrimp (peeled and deveined)
  • 2 tbsp honey
  • 1 tbsp chipotle peppers in adobo sauce (finely chopped)
  • 1 tbsp olive oil
  • 1 tbsp lime juice (freshly squeezed)
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp cumin
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 cups cooked rice (white, brown, or cauliflower rice)
  • 1 cup black beans (rinsed and drained)
  • 1 cup corn kernels (grilled or sautéed)
  • 1 cup diced bell peppers (red, yellow, or green)
  • 1 cup cherry tomatoes (halved)
  • ½ cup red onion (finely diced)
  • ½ cup avocado slices
  • ¼ cup fresh cilantro (chopped)
  • ¼ cup crumbled cotija cheese
  • 1 lime (cut into wedges)

Instructions

  1. In a large bowl, combine honey, chopped chipotle peppers in adobo sauce, olive oil, lime juice, garlic powder, smoked paprika, cumin, salt, and pepper. Stir well to form a smooth marinade.
  2. Add the shrimp to the bowl, tossing to coat thoroughly. Cover and marinate for at least 30 minutes in the refrigerator.
  3. Heat a skillet over medium-high heat and add a drizzle of olive oil. Once hot, add the marinated shrimp in a single layer. Cook for 2-3 minutes per side until the shrimp turns pink and opaque.
  4. In serving bowls, layer the cooked rice as the base. Add black beans, grilled corn, diced bell peppers, cherry tomatoes, and red onions in sections for a vibrant presentation.
  5. Top with the cooked honey chipotle shrimp and complete the bowl with avocado slices, cilantro, crumbled cotija cheese, and lime wedges on the side.

Notes

Control the heat by adjusting the amount of chipotle peppers. This recipe is suitable for meal prep as cooked ingredients can be stored separately and assembled before serving.
