Keto Mug Cake

A quick and easy low-carb dessert that can be made in a mug, perfect for satisfying your sweet tooth without the guilt.

Ingredients

  • 1/4 cup almond flour
  • 2 tbsp cocoa powder (for chocolate version)
  • 1 tbsp sweetener (erythritol or similar)
  • 1/4 tsp baking powder
  • 1 egg
  • 1 tbsp butter or coconut oil
  • 1 dash of vanilla extract (for vanilla version)
  • 1 tbsp peanut butter (optional)
  • Chocolate chips, nuts, or berries (optional toppings)

Instructions

  1. In a large mug, mix almond flour, cocoa powder, sweetener, and baking powder.
  2. Add the egg and melted butter or oil to the dry ingredients and mix until well combined.
  3. If making a vanilla version, substitute cocoa powder for more almond flour and add vanilla extract.
  4. If desired, mix in peanut butter or chocolate chips.
  5. Microwave for 60 seconds, then check for doneness. If wobbly in the center, let sit for 30 seconds.
  6. Top with whipped cream, sugar-free ice cream, or nuts as desired.

Notes

Use a large mug to prevent overflow. Adjust cooking time as microwaves vary. For denser cakes, add a splash of non-dairy milk.
