Slow Cooker Lemon Herb Chicken and Rice

A cozy, lemony dish of juicy chicken and soft rice, all made effortlessly in a slow cooker.

Ingredients

  • 2 pounds boneless, skinless chicken breasts or thighs
  • 1 cup long grain white rice
  • 2.5 cups low-sodium chicken broth
  • Juice and zest from 1 large lemon
  • 2 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt & black pepper to taste
  • 1 tablespoon olive oil
  • Fresh parsley or dill for garnish (optional)
  • Frozen peas or carrots (optional)

Instructions

  1. Rub chicken pieces with olive oil, salt, and pepper, then place in the slow cooker.
  2. Sprinkle minced garlic, dried oregano, and basil over the chicken.
  3. Evenly spread the rice on top of the chicken.
  4. Squeeze lemon juice and add lemon zest over the rice.
  5. Pour in the chicken broth and add any optional veggies at this time.
  6. Cover and cook on low for 3.5 to 4 hours.
  7. Once cooked, remove chicken, shred or slice it, fluff the rice, and mix together.
  8. Adjust seasoning with salt and garnish with fresh parsley before serving.

Notes

For best results, do not use instant rice. Letting the dish sit for 5 minutes before serving enhances the flavors.
