12–15 small mozzarella balls (bocconcini) or mozzarella cut into cubes

Instructions
Chop the spinach finely and mince the garlic. Sauté in olive oil until the spinach softens and garlic is aromatic.
In a bowl, combine the ground meat, sautéed spinach and garlic, breadcrumbs, Parmesan cheese, egg, salt, pepper, and Italian seasoning. Mix gently.
Take about 2 tablespoons of the meat mixture, flatten it, place a mozzarella ball in the center, wrap the meat around it, and roll into a ball.
Heat olive oil in a skillet over medium heat. Cook meatballs in batches, browning all sides, then transfer to a baking dish and bake at 375°F (190°C) for about 10 minutes until cooked through.
Garnish with fresh parsley and serve immediately.
Notes
Do not skip pre-sautéing the spinach and garlic for better flavor.
