Valentine Strawberry Cookies

Delightful and soft strawberry cookies made with freeze-dried strawberries, perfect for sharing on Valentine’s Day.

  • 1.2 oz package Freeze-Dried Strawberries (about 1 ¼ cups), blitzed into a fine powder
  • ½ teaspoon Baking Soda
  • ¼ teaspoon Salt
  • ½ cup Unsalted Butter (1 stick), softened to room temperature
  • ¾ cup Granulated Sugar
  • 1 large Egg, at room temperature
  • 1 teaspoon Vanilla Extract
  • Optional: ¾ cup white chocolate chips

Instructions

  1. Prepare the Strawberry Powder: Place freeze-dried strawberries into a food processor and pulse until a fine powder.
  2. Combine Dry Ingredients: In a medium bowl, whisk together flour, strawberry powder, baking soda, and salt.
  3. Cream Butter and Sugar: In a large bowl, beat the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  4. Add Wet Ingredients: Beat in the egg and vanilla extract until just combined.
  5. Combine Wet and Dry: Gradually add dry ingredients to wet ingredients, mixing until just combined.
  6. Chill the Dough: Cover the dough and chill in the refrigerator for at least 30 minutes.
  7. Preheat and Prep: Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  8. Shape and Bake: Roll dough into balls and place them on baking sheets. Bake for 9-11 minutes until edges are lightly golden.
  9. Cool Down: Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
