Nun’s Puffs

Delightfully airy pastries with a light, golden crust and a slightly sweet, custard-like interior, perfect for tea-time or brunch.

Ingredients

  • 1/2 cup (1 stick) unsalted butter
  • 1 cup whole milk
  • 3/4 cup all-purpose flour
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon salt
  • 4 large eggs
  • Cinnamon sugar or powdered sugar (for topping, optional)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a muffin tin.
  2. In a medium saucepan, combine butter, milk, sugar, and salt, bringing to a boil while stirring constantly.
  3. Add all the flour at once, stirring until a ball forms and pulls away from the pan.
  4. Remove from heat and let cool for 5 minutes. Beat in the eggs one at a time until well incorporated.
  5. Spoon the batter into muffin cups about halfway full and bake for 30-35 minutes or until golden brown and puffy.
  6. Optionally, sprinkle with cinnamon sugar while warm or dust with powdered sugar once cooled.

Notes

These pastries are best served warm and can be topped with various sweet or savory options.
