Healthy Coronation Chicken

A lightened-up version of the classic British coronation chicken, made nutritious with Greek yogurt and spices.

Ingredients

  • 500g cooked chicken breast (shredded or diced)
  • 150g fat-free Greek yogurt (or low-fat natural yogurt)
  • 2 tbsp light mayonnaise (optional for extra creaminess)
  • 1 tbsp mild curry powder
  • 1 tbsp low-sugar mango chutney
  • 2 tbsp sultanas or raisins (optional)
  • 1 tbsp lemon juice
  • 1 tsp turmeric
  • Salt and black pepper to taste
  • Fresh coriander for garnish
  • 1 small apple (diced, optional)
  • Handful of flaked almonds (optional)
  • Fresh spinach or arugula (for serving)

Instructions

  1. Cook the chicken by poaching in seasoned water for 15-20 minutes until fully cooked, or use leftover roast chicken. Shred or dice into bite-sized pieces.
  2. In a mixing bowl, combine Greek yogurt, light mayonnaise (if using), curry powder, mango chutney, turmeric, and lemon juice. Stir until smooth.
  3. Add the cooked chicken to the sauce and stir to coat. If using, mix in diced apple, sultanas, or flaked almonds.
  4. Season with salt and black pepper to taste. Optional: sprinkle fresh coriander or parsley for added flavor.
  5. Serve in sandwiches, wraps, or over a salad with fresh greens.

Notes

This dish is high in protein and can be adapted for meal prep. It stores well in the fridge for up to 3 days.
