  • 2 cups cooked shredded chicken (rotisserie chicken works great)
  • 1/2 cup buffalo sauce (choose your preferred spice level)
  • 4 oz cream cheese (softened)
  • 1 cup shredded mozzarella or cheddar cheese
  • 1/4 cup green onions, finely chopped
  • 10 pieces egg roll wrappers
  • cooking spray (for air fryer crispiness)
  • ranch or blue cheese dressing (for dipping)

Method
 

Preparation
  1. In a large bowl, combine the shredded chicken, buffalo sauce, softened cream cheese, and shredded cheese. Stir thoroughly.
  2. Fold in finely chopped green onions.
Rolling the Egg Rolls
  1. Lay an egg roll wrapper on a clean surface, add 2 tablespoons of the buffalo chicken mixture to the center.
  2. Fold the bottom corner over the filling, then fold in the sides tightly, rolling upward and sealing the top with a dab of water.
Cooking
  1. Preheat your air fryer to 375°F (190°C) for 3-5 minutes and lightly spray the basket with cooking spray.
  2. Place the egg rolls in the air fryer, cook at 375°F (190°C) for 8-10 minutes, flipping halfway through.

Notes

For extra crispiness, spray the egg rolls lightly with cooking spray before cooking. Avoid overcrowding the basket for even cooking.
