Ingredients

  • 4 potatoes potatoes, peeled and cut into wedges For crispy roast potatoes.
  • 200 g cod fillets Use sustainably sourced cod for the fish and chips.
  • 1 tbsp malt vinegar For seasoning the fish and chips.
  • 1 lemon fresh lemon, juiced and zested Adds brightness to the recipes.
  • 200 g chickpeas For roasting as snacks.
  • 100 g mushrooms For stuffed mushrooms.
  • 100 g lean sausage meat For a healthier sausage roll.
  • 6 eggs For scotch eggs.
Seasonings and Oils
  • 2 tbsp olive oil For drizzling over potatoes and veggies.
  • 1 tsp sea salt For seasoning all dishes.
  • 1 tsp smoked paprika For roasting chickpeas.

Method
 

Preparation
  1. Preheat the air fryer to 200°C (400°F).
  2. Toss the potato wedges with olive oil, sea salt, and finely chopped rosemary.
  3. For stuffed mushrooms, clean and stuff mushrooms with the mixture of sausage meat, lemon zest, and spices.
  4. For scotch eggs, boil the eggs until lightly firm and let them cool before wrapping in sausage meat.
Cooking
  1. Place potato wedges in the air fryer basket and cook for 20 minutes, shaking the basket halfway.
  2. Add cod fillets to the air fryer for the last 10 minutes of the potato cooking time, drizzling with malt vinegar and lemon juice.
  3. Cook chickpeas by placing them in the air fryer for about 15 minutes, shaking them for even cooking.
  4. Cook stuffed mushrooms for about 10 minutes until golden brown.
  5. Deep fry scotch eggs in the air fryer until golden and hot.
