For the Cake
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 tsp ground cinnamon the star spice
  • 2 tsp baking powder for a light, fluffy rise
  • 1/2 tsp baking soda
  • 1/2 tsp salt enhances flavor
  • 1/2 cup butter, softened adds richness
  • 2 large eggs bind and add structure
  • 1 cup buttermilk or sour cream adds moisture
  • 1 tsp vanilla extract for aroma and warmth
For the Cinnamon Sugar Swirl
  • 1/2 cup brown sugar
  • 2 tsp ground cinnamon
  • 2 tbsp all-purpose flour
  • 2 tbsp melted butter helps it spread

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.
  2. In a large bowl, cream butter and sugars until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition. Stir in vanilla.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  5. Alternate adding the flour mixture and buttermilk to the butter mixture, beginning and ending with flour.
  6. Pour half the batter into the prepared pan, sprinkle with half the cinnamon sugar topping, then add remaining batter and top with the rest of the topping.
  7. Swirl gently with a knife for a marbled effect.
  8. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let cool slightly before slicing into squares and serving.

Notes

For a gluten-free version, substitute with a gluten-free all-purpose blend. You can also add nuts or fruits for extra texture.
