Method
 

Preparation
  1. Preheat oven to 350°F (175°C) and grease a 9-inch springform or square baking pan.
  2. In a mixing bowl, cream the butter and sugars until light and fluffy.
  3. Beat in the eggs one at a time, mixing well after each.
  4. In another bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the butter mixture, alternating with sour cream, starting and ending with dry ingredients.
  6. Gently fold in the chopped apples and optional nuts.
  7. Pour half the batter into the prepared pan and sprinkle half the streusel topping over it.
  8. Add the remaining batter and top with the rest of the streusel. Pat down lightly.
Baking
  1. Bake for 45-50 minutes, testing for doneness with a toothpick.
  2. Allow cooling in the pan for 15-20 minutes before removing and serving.

Notes

For best flavor, use a combination of tart and sweet apples. This cake can be stored at room temperature for up to 2 days or refrigerated for 5 days.
