Preparation
- Preheat oven to 350°F (175°C) and grease a 9-inch springform or square baking pan.
- In a mixing bowl, cream the butter and sugars until light and fluffy.
- Beat in the eggs one at a time, mixing well after each.
- In another bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the butter mixture, alternating with sour cream, starting and ending with dry ingredients.
- Gently fold in the chopped apples and optional nuts.
- Pour half the batter into the prepared pan and sprinkle half the streusel topping over it.
- Add the remaining batter and top with the rest of the streusel. Pat down lightly.
Baking
- Bake for 45-50 minutes, testing for doneness with a toothpick.
- Allow cooling in the pan for 15-20 minutes before removing and serving.
Notes
For best flavor, use a combination of tart and sweet apples. This cake can be stored at room temperature for up to 2 days or refrigerated for 5 days.
