Prepare the Noodles
- Bring a pot of water to a boil. Add the rice noodles and cook according to package instructions until tender.
- Once cooked, shock the noodles in cold water to prevent them from becoming mushy.
Cook the Beef Mixture
- In a large wok or deep skillet, heat a small amount of oil over medium heat. Add the minced ginger and garlic, cooking until fragrant.
- Add the minced beef and cook until browned and cooked through.
- Stir in the soy sauce and mix well to coat the beef.
Combine and Finish
- Add the veggies (bok choy, snap peas, bell pepper, and carrots) to the beef mixture and cook for another 2-3 minutes until veggies are tender yet crisp.
- Toss in the prepared noodles, using tongs to quickly coat them in the sauce.
- Drizzle toasted sesame oil before serving and garnish with cilantro and green onions.
