For the Noodles
  • 8 oz medium width rice noodles Choose a width that holds sauce without becoming mushy.
For the Beef Mixture

  • 2 tbsp soy sauce Use high-quality soy sauce for best flavor.
  • 1 tbsp toasted sesame oil Drizzle before serving for enhanced flavor.
  • 1 tbsp fresh ginger, minced Aromatic base essential for the dish.
  • 3 cloves garlic, minced Adds depth and flavor.
For the Vegetables
  • 1 cup bok choy, chopped Add near the end of cooking for freshness.
  • 1 cup snap peas, trimmed Adds a crunchy texture.
  • 1 cup bell pepper, julienned Adds color and sweetness.

Method
 

Prepare the Noodles
  1. Bring a pot of water to a boil. Add the rice noodles and cook according to package instructions until tender.
  2. Once cooked, shock the noodles in cold water to prevent them from becoming mushy.
Cook the Beef Mixture
  1. In a large wok or deep skillet, heat a small amount of oil over medium heat. Add the minced ginger and garlic, cooking until fragrant.
  2. Add the minced beef and cook until browned and cooked through.
  3. Stir in the soy sauce and mix well to coat the beef.
Combine and Finish
  1. Add the veggies (bok choy, snap peas, bell pepper, and carrots) to the beef mixture and cook for another 2-3 minutes until veggies are tender yet crisp.
  2. Toss in the prepared noodles, using tongs to quickly coat them in the sauce.
  3. Drizzle toasted sesame oil before serving and garnish with cilantro and green onions.
