  • 4 large hard-boiled eggs
  • 1 large ripe avocado peeled and pitted
  • 1 tablespoon Greek yogurt optional for creaminess
  • 2 tablespoons lime juice to prevent browning
  • 1 small red onion finely chopped
  • salt to taste
  • black pepper to taste
For Assembly
  • 8 leaves large Romaine or Butter lettuce for wrapping
  • 2 tablespoons fresh herbs e.g., dill or parsley, optional
  • 1 dash sriracha or cayenne pepper for added kick, optional
  • 4 slices crispy bacon crushed, optional

Method
 

Preparation
  1. Peel and chop the hard-boiled eggs.
  2. In a bowl, mash the avocado and combine with lime juice to prevent browning.
  3. Fold in the chopped eggs, Greek yogurt, red onion, salt, and pepper until mixed well.
Assembly
  1. Lay out the lettuce leaves on a serving platter.
  2. Spoon the avocado egg mixture onto each lettuce leaf.
  3. Top with fresh herbs, and if desired, add crushed bacon or a dash of sriracha.
  4. Serve immediately for best texture.

Notes

For meal prep, store the filling and lettuce separately to keep the wraps fresh and crisp. Use lemon or lime juice to coat avocado to prevent oxidation.
