  • 2 pieces ripe bananas, mashed The mushier, the better
  • 1.5 cups fresh or frozen blueberries Use frozen blueberries straight from the freezer—no need to thaw
  • 2 cups rolled oats Old-fashioned ones work best
  • 1 tsp baking powder
  • 1 tsp cinnamon If you're feeling fancy
  • 0.5 tsp salt A pinch
  • 2 cups unsweetened almond milk Or any milk of your choice
  • 1 tsp vanilla extract A splash
  • 2 tbsp maple syrup or honey Optional
  • 1 piece egg Or flax egg for vegan option
  • 1 tbsp coconut oil or melted butter Optional

Method
 

Preparation
  1. Preheat oven to 375°F (190°C). Lightly grease an 8x8-inch baking dish.
  2. In a large bowl, mix oats, baking powder, cinnamon, and salt.
  3. In another bowl, combine mashed bananas, milk, egg, vanilla, and maple syrup. Mix well.
  4. Add wet mixture to the dry ingredients and stir to combine.
  5. Fold in the blueberries gently.
  6. Pour the mixture into the prepared dish and spread evenly.
  7. Bake for 35–40 minutes until the top is golden and the oatmeal is set.
  8. Let cool slightly before serving. Serve warm or chilled.

Notes

Store leftovers in the fridge for up to 5 days or freeze for later. Great served with a dollop of yogurt or drizzle of nut butter. Add chopped nuts or chocolate chips for extra texture.
