Preparation
- Preheat oven to 375°F (190°C). Lightly grease an 8x8-inch baking dish.
- In a large bowl, mix oats, baking powder, cinnamon, and salt.
- In another bowl, combine mashed bananas, milk, egg, vanilla, and maple syrup. Mix well.
- Add wet mixture to the dry ingredients and stir to combine.
- Fold in the blueberries gently.
- Pour the mixture into the prepared dish and spread evenly.
- Bake for 35–40 minutes until the top is golden and the oatmeal is set.
- Let cool slightly before serving. Serve warm or chilled.
Notes
Store leftovers in the fridge for up to 5 days or freeze for later. Great served with a dollop of yogurt or drizzle of nut butter. Add chopped nuts or chocolate chips for extra texture.
