Ingredients
  

For the crust and topping
  • 1.5 cups all-purpose flour
  • 1 cup sugar white sugar is fine
  • 0.5 cups salted butter, melted
  • 1 large egg
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt a pinch of salt
For the filling
  • 2 cups fresh blueberries frozen works in a pinch but fresh is better
  • 1 lemon juiced for a little zip

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Mix the crust ingredients and press half of it into a greased pan.
  3. Toss the blueberries with lemon juice and sugar, then layer them over the crust.
  4. Crumble the remaining crust on top.
Baking
  1. Bake for 30-35 minutes until golden and bubbly.
  2. Let cool before slicing.

Notes

Chill leftovers for an even more refreshing taste. Great for road trips and can be frozen for later enjoyment.
