Ingredients
  

Main Ingredients
  • 1 large head broccoli, chopped into small florets Don’t skip the stems, they’re good too!
  • 1/4 cup shredded Parmesan Add more if you’re feeling generous.
  • 1/2 cup Caesar dressing Store-bought is fine, homemade if you’re fancy.
  • 1 handful croutons Make your own if you want 'chef' points.
  • to taste black pepper Optional, but major flavor booster.
  • optional lemon wedges Enhances flavor.
Optional Extras
  • sliced almonds, roasted chickpeas, or grilled chicken Feel free to toss in any of these for added flavor.

Method
 

Preparation
  1. Steam your broccoli for just 1-2 minutes—enough to take the raw bite out without making it mushy. Or if you like it raw, skip this and live on the edge.
  2. Let the broccoli cool.
  3. Toss broccoli in a big bowl with Caesar dressing. Make sure every piece gets some love.
Assembly
  1. Sprinkle with Parmesan and add your croutons. Toss again.
  2. Crack a bunch of black pepper over the top. Squeeze lemon juice if you’ve got it.
  3. Chill for 10 minutes if you can stand to wait. It’s even better once the flavors soak in.

Notes

This salad can be made ahead of time and holds up well in the fridge. Don’t let anyone tell you there’s only one way to make it; feel free to swap out the dressing or add extras.
