Preparation
- Steam your broccoli for just 1-2 minutes—enough to take the raw bite out without making it mushy. Or if you like it raw, skip this and live on the edge.
- Let the broccoli cool.
- Toss broccoli in a big bowl with Caesar dressing. Make sure every piece gets some love.
Assembly
- Sprinkle with Parmesan and add your croutons. Toss again.
- Crack a bunch of black pepper over the top. Squeeze lemon juice if you’ve got it.
- Chill for 10 minutes if you can stand to wait. It’s even better once the flavors soak in.
Notes
This salad can be made ahead of time and holds up well in the fridge. Don’t let anyone tell you there’s only one way to make it; feel free to swap out the dressing or add extras.
