  • 2 tablespoons butter For glazing the carrots

Method
 

Preparation
  1. Wash and peel the carrots, cutting them into uniform pieces.
  2. If using whole carrots, slice them into 1-inch chunks.
Cooking
  1. In a saucepan, add the carrots and enough water to cover them, and bring to a boil.
  2. Simmer the carrots for about 5-10 minutes, until tender but still firm.
  3. Drain the carrots and return them to the pan.
  4. Add butter, brown sugar, and a pinch of salt to the pan with the carrots.
  5. Cook on medium-low heat, stirring occasionally, until the carrots are coated and slightly caramelized, about 10 minutes.
Serving
  1. Remove from heat, and add optional lemon juice or herbs just before serving.
  2. Serve warm as a delightful side dish.

Notes

Prepare carrots ahead of time by blanching them. Store in ice water and finish with glaze just before serving. Handle cooked carrots gently to maintain their texture.
