  • 0.5 cup water tap works, no drama
  • 0.5 teaspoon vanilla or maple extract if you actually have maple, cool, but vanilla’s great!
  • 1 pinch salt optional
  • 1 swirl butter optional, feel free to add if you're feeling bold

Preparation
  1. Toss the sugar and water into a small pan.
  2. Put it on medium heat, stirring to combine.
  3. Watch for bubbles, ensuring it turns glossy and syrupy.
  4. Once clear and smooth, cut the heat and stir in the vanilla extract and butter.

Notes

Store in a mason jar or a clean mug. Refrigerate for longer storage, rewarm as needed. If it looks a little cloudy the next day, a quick zap in the microwave will fix it straight up. Cleaning the pan is fast too with hot water.
