Preparation
- Preheat the oven to 375°F (190°C).
- In a large bowl, mix together the cubed potatoes, chicken, olive oil, garlic, onion, salt, and pepper.
- If using, add the frozen peas or corn and other optional ingredients and mix well.
Baking
- Transfer the mixture to a greased baking dish and spread evenly.
- Cover with foil and bake for 30 minutes.
- Remove the foil, sprinkle cheese on top, and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
Serving
- Once done, let it cool slightly before serving.
- Garnish with sour cream, chopped green onions, or parsley, and enjoy!
Notes
Leftovers can be stored in the fridge for 3-4 days. Reheat slowly to avoid rubbery texture. Freezing may affect the texture of the cheese.
