  • 1 pack smoked sausage (about 14 ounces) Polish or kielbasa sausage recommended
  • 1 cup shredded cheddar cheese Use more if preferred
  • 1 packet ranch seasoning mix
  • 3 tablespoons olive oil Any oil can be used
  • to taste Salt and pepper Season according to preference
  • ¼ cup sliced green onions Optional but recommended

Method
 

Preparation
  1. Preheat oven to 400°F. Chop potatoes into bite-sized chunks.
  2. Slice the smoked sausage into rounds or half-moons.
  3. In a large bowl, toss the potatoes and sausage with ranch seasoning, olive oil, salt, and pepper.
Cooking
  1. Spread the mixture on a foil-lined baking sheet or casserole dish. Bake for approximately 40 minutes, stirring halfway.
  2. For extra crispiness, broil for 1 minute at the end.
  3. Sprinkle cheese on top and bake until melted, about 5 more minutes.
Serving
  1. Top with green onions, if using, and serve hot.

Feel free to customize the ingredients; you can use different types of sausage or seasonings based on your preference. Cheese choice is flexible; mix in pepper jack for a spicy kick.
