  • 2 cups fresh or preserved cherries Fresh ripe sweet cherries or high-quality jarred/frozen cherries (thawed and drained) work well.
  • 1 cup amaretto liqueur Mix with a touch of espresso or cherry juice for dipping.
  • 1 cup mascarpone cheese Ensure it's fresh for the best texture.
  • 4 large egg yolks Beaten with sugar to achieve a creamy layer.
  • 1/2 cup granulated sugar For sweetness in the mascarpone layer.
  • 2 cups ladyfingers Quickly dip in the amaretto mixture.

Method
 

Preparation
  1. In a bowl, combine the amaretto with a touch of espresso or cherry juice.
  2. Dip each ladyfinger quickly in the amaretto mixture and arrange them in a single layer in a dish.
  3. In a separate bowl, mix the mascarpone, egg yolks, and sugar until smooth.
  4. Spread a layer of the mascarpone mixture over the dipped ladyfingers.
  5. Scatter a generous amount of cherries over the mascarpone layer.
  6. Repeat the layers, ending with a final layer of mascarpone on top.
Garnishing
  1. Dust the top with cocoa powder, grated dark chocolate, or toasted almonds if desired.
  2. Add fresh cherries on top for a stunning presentation.
Chilling
  1. Cover and refrigerate the tiramisu for at least 6 hours, preferably overnight.
  2. Before serving, let it sit at room temperature for about 10-15 minutes to enhance flavors.

Notes

Store in an airtight container in the fridge for up to 2-3 days for optimal taste. Can serve in individual glasses for elegant presentation. Pairs well with strong espresso or sweet dessert wine.
