For Coating
  • 1 cup powdered sugar For the snowy coating.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Gradually add the flour and salt, mixing until combined.
  4. Gently fold in the chopped cherries and vanilla extract.
  5. Chill the dough for at least 30 minutes.
Baking
  1. Scoop tablespoon-sized balls of dough and place them on a baking sheet lined with parchment paper.
  2. Bake for 15 to 20 minutes, or until lightly golden.
  3. Immediately roll the warm cookies in powdered sugar, then let them cool slightly before rolling them in powdered sugar again for a thicker coating.

Notes

Store in an airtight container for up to a week. Cookies can be frozen for up to 2-3 months; re-dust with powdered sugar before serving.
