Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Gradually add the flour and salt, mixing until combined.
- Gently fold in the chopped cherries and vanilla extract.
- Chill the dough for at least 30 minutes.
Baking
- Scoop tablespoon-sized balls of dough and place them on a baking sheet lined with parchment paper.
- Bake for 15 to 20 minutes, or until lightly golden.
- Immediately roll the warm cookies in powdered sugar, then let them cool slightly before rolling them in powdered sugar again for a thicker coating.
Notes
Store in an airtight container for up to a week. Cookies can be frozen for up to 2-3 months; re-dust with powdered sugar before serving.
