Preparation
- Prepare the Dry Ingredients: In a large bowl, whisk together flour, blended oats, baking soda, and salt.
- Cream the Butter and Sugars: Using a mixer, beat butter, brown sugar, and granulated sugar until light and fluffy.
- Add Honey, Eggs, and Vanilla: Mix in honey, eggs, and vanilla extract until well combined.
- Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in Chocolate Chunks: Gently mix in the semi-sweet and milk chocolate chunks.
- Chill the Dough: Refrigerate the dough for at least 30 minutes.
Baking
- Preheat the oven to 350°F (175°C). Scoop dough onto a lined baking sheet and bake for 10–12 minutes.
- Cool and Enjoy: Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack.
