  • 4 cups Romaine lettuce (or any crisp lettuce) Romaine holds up well.
  • 1 cup Cherry tomatoes They’re extra sweet, especially in summer.
  • 1 medium Cucumber For that snap, you know?
  • 1/4 medium Red onion Just a smidge, for bite.
  • 1 cup Shredded carrots Optional, but adds a nice color and sweetness.
  • 1/2 cup Honey mustard dressing Store-bought is fine, but homemade is worth the extra effort.
  • to taste Salt and pepper No skipping!

Method
 

Preparation
  1. Grab a large cutting board and chop all ingredients into even, fork-friendly pieces.
  2. Toss chopped lettuce, tomatoes, cucumber, onion, and carrots in a big mixing bowl.
  3. Chop the cooked chicken and add it to the bowl.
  4. Drizzle honey mustard over the salad, starting with a light amount.
  5. Mix, toss, and taste. Adjust dressing, salt, and pepper as needed.
  6. Serve in bowls and enjoy your easy dinner!

Notes

If the salad looks too dry, add extra drizzles of dressing. For a fancier touch, top with fresh herbs.
