  • 2 medium apples (Granny Smith or Honeycrisp) Chopped and tossed in lemon juice to prevent browning.
  • 1 medium carrot Grated for added color and sweetness.
Dressing Ingredients
  • 1 cup mayonnaise Can substitute half with Greek yogurt for a lighter version.
  • 2 tablespoons apple cider vinegar Adds tanginess to the dressing.
  • 1 tablespoon lemon juice Freshly squeezed for brightness.
  • 1 teaspoon celery seed Enhances the flavor profile.
  • 1 pinch salt To taste.
  • 1 teaspoon sugar or honey Optional, if the apples are too tart.

Method
 

Preparation
  1. In a large bowl, combine the shredded cabbage, chopped apples, and grated carrot.
  2. In a separate bowl, whisk together the mayonnaise, apple cider vinegar, lemon juice, celery seed, salt, and sugar or honey.
Mixing
  1. Pour the dressing over the salad ingredients and toss until evenly coated.
  2. Taste and adjust the seasoning as necessary.
Serving
  1. Serve immediately or refrigerate for up to 1 hour before serving.

Notes

To keep apples from browning, toss them in lemon juice as soon as they are cut. Enjoy with BBQ, on tacos, or as a standalone side salad.
