Copycat Chipotle Chicken

Ingredients
  

Marinade Ingredients
  • 2 tablespoons olive oil
  • 2-3 pieces chipotle peppers in adobo sauce, chopped the key, don't skip
  • 1 tablespoon lime juice fresh, if you have it, but bottled works in a pinch
  • 2 cloves garlic, smashed
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
Main Ingredients
  • 1.5 lbs boneless chicken thighs they stay juicier than breasts

Method
 

Preparation
  1. In a large bowl, combine olive oil, chipotle peppers, lime juice, garlic, oregano, cumin, paprika, salt, and pepper. Stir well.
  2. Add the chicken thighs and coat each piece well with the marinade.
  3. Cover and refrigerate for at least 30 minutes, preferably overnight.
Cooking
  1. Heat a skillet, grill pan, or outdoor grill over medium-high heat.
  2. Cook the chicken thighs for 5-7 minutes on each side until dark and slightly crisp.
  3. Let the chicken rest for a few minutes before slicing or chopping.

Notes

Great for meal prep; the chicken can be stored in the fridge for up to four days, and tastes just as good cold. Can be used in tacos, salads, or quesadillas.
