Ingredients
  

Bean Foundation
  • 1 can black-eyed peas, drained and rinsed Can substitute with other beans if desired.
  • 1 can black beans, drained and rinsed Provides a creamy texture.
Fresh Veggie Crunch
  • 1 cup red bell pepper, diced Add more colors for a vibrant dish.
  • 1 cup orange bell pepper, diced
  • 1 cup green bell pepper, diced
  • 1/2 cup red onion, diced Can adjust amount for less bite.
  • 1 cup sweet corn, cooked Use fresh or frozen corn.
  • 1/4 cup cilantro, chopped Adjust based on taste preference.
Zesty Lime Dressing
  • 1/4 cup olive oil Choose a good quality for best flavor.
  • 3 tablespoons fresh lime juice Add more to taste.
  • 1 tablespoon red wine vinegar Can replace with apple cider vinegar.
  • 1 teaspoon honey or maple syrup Optional sweetener.
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1 medium jalapeño, seeded and minced Can substitute with milder peppers.

Method
 

Preparation
  1. In a large mixing bowl, combine black-eyed peas, black beans, diced bell peppers, red onion, sweet corn, and chopped cilantro.
  2. In a separate bowl, whisk together olive oil, fresh lime juice, red wine vinegar, honey or maple syrup, cumin, chili powder, garlic powder, and minced jalapeño to create the dressing.
  3. Pour the dressing over the bean and vegetable mixture and toss to combine.
  4. Allow to marinate in the fridge for at least 30 minutes, but it can be made the day before for better flavor.

Notes

Cowboy Caviar is best served chilled and can be enjoyed with chips, as a topping for grilled meats, or straight from the bowl. Customize with ingredients like avocado or quinoa for added richness and nutrition.
