  • 1 large lemon, zested and juiced Zest to be rubbed into sweetener
  • 2 tbsp honey or maple syrup Adjust based on desired sweetness
  • 1 pinch sea salt Enhances sweetness

  • 1 cup granola For crunch
  • 1 cup mixed berries Blueberries, raspberries, or any preferred berries

Preparation
  1. Strain the Greek yogurt using a cheesecloth over a bowl for 30 minutes to remove excess whey.
  2. In a separate bowl, rub the lemon zest into the honey or maple syrup to release essential oils.
  3. Whisk the strained yogurt vigorously in a mixing bowl until smooth.
  4. Gently fold in the lemon juice and the infused sweetener until well combined.
  5. Add a pinch of sea salt and mix again.
Serving
  1. Serve the creamy lemon yogurt in bowls or glasses, topped with granola and mixed berries.

Notes

For a dessert version, use a drizzle of dark raw honey or high-quality maple syrup instead. Freeze for a fro-yo vibe during hot summer days. Pair with additional toppings like nuts or a fruit compote for added flavor.
