Preparation
- Wash and pit the cherries. If not using pitted cherries, halve them to remove the pits.
- Preheat the oven to 350°F (175°C).
Making the Batter
- In a mixing bowl, whisk together the eggs and sugar until light and fluffy.
- Gradually add the flour and salt, mixing until combined.
- Slowly pour in the milk and vanilla extract while whisking to create a smooth batter.
Baking
- Grease your baking dish well with butter.
- Spread the prepared cherries evenly on the bottom of the dish.
- Pour the batter over the cherries.
- Bake in the preheated oven for 30 to 35 minutes, or until golden and puffed.
- A knife inserted near the center should come out clean.
Notes
Serve warm with powdered sugar and a dollop of crème fraîche or ice cream. Add a splash of almond extract for extra flavor if using pitted cherries.
