Ingredients
  

For the Clafoutis
  • 2 cups fresh cherries, pitted You can use unpitted cherries for a traditional flavor.
  • 3 large eggs Room temperature for best results.
  • 1 cup milk Room temperature for smoother batter.
  • 1 cup all-purpose flour
  • 1 cup sugar Adjust to taste.
  • 1 pinch salt
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon almond extract Optional, adds an almond flavor.
  • 2 tablespoons butter, for greasing Ensure the dish is well-buttered.

Method
 

Preparation
  1. Wash and pit the cherries. If not using pitted cherries, halve them to remove the pits.
  2. Preheat the oven to 350°F (175°C).
Making the Batter
  1. In a mixing bowl, whisk together the eggs and sugar until light and fluffy.
  2. Gradually add the flour and salt, mixing until combined.
  3. Slowly pour in the milk and vanilla extract while whisking to create a smooth batter.
Baking
  1. Grease your baking dish well with butter.
  2. Spread the prepared cherries evenly on the bottom of the dish.
  3. Pour the batter over the cherries.
  4. Bake in the preheated oven for 30 to 35 minutes, or until golden and puffed.
  5. A knife inserted near the center should come out clean.

Notes

Serve warm with powdered sugar and a dollop of crème fraîche or ice cream. Add a splash of almond extract for extra flavor if using pitted cherries.
