Preparing the Mixture
- In a saucepan, combine the heavy cream, whole milk, sugar, and fresh mint leaves. Heat gently without boiling to infuse the mint flavor.
- Once heated, remove from heat and let it steep for about 30 minutes.
- Strain the mixture to remove mint leaves, then blend in fresh spinach for color.
- Add vanilla extract and stir well.
Churning the Ice Cream
- Chill the mixture in the refrigerator for at least 2 hours or until completely cool.
- Use an ice cream maker to churn the mixture, adding chocolate chunks during the last few minutes.
- If you don’t have an ice cream maker, manually whip the cream until frothy and mix in the other ingredients, then freeze.
Freezing
- Transfer the mixture to an airtight container and freeze for at least 6 hours or overnight.
Serving
- Scoop the ice cream into bowls and add optional toppings like sea salt, warm fudge, and fresh berries.
- Garnish with a sprig of fresh mint and serve.
