Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream the softened butter and granulated sugar until light and fluffy.
  3. Beat in the vanilla extract.
  4. Gradually add the flour and salt, mixing until just combined.
  5. Chill the dough in the refrigerator for at least 30 minutes.
Shaping and Baking
  1. Scoop tablespoon-sized amounts of dough and roll into balls.
  2. Place on a baking sheet lined with parchment paper, and use your thumb to create an indentation in each ball.
  3. Fill the indentation with about a teaspoon of fruit preserves.
  4. Bake for 10-12 minutes or until the edges are lightly golden.
Glazing
  1. Once cookies cool, prepare the glaze by mixing powdered sugar with almond extract and just enough water to achieve a drizzle consistency.
  2. Drizzle the glaze over cooled cookies.
