  • 4 medium potatoes (preferably starchy varieties like Russets)
  • 1 medium onion, finely grated
  • 2 large eggs to bind the mixture
  • 1/4 cup flour (or potato starch for gluten-free)
  • to taste salt and pepper for seasoning
  • oil spray for air frying

Method
 

Preparation
  1. Peel and grate the potatoes.
  2. Soak the grated potatoes in cold water for 10-15 minutes to remove excess starch.
  3. Drain and squeeze out excess moisture from the potatoes.
Mixing the Ingredients
  1. In a bowl, mix the grated potatoes, grated onion, eggs, flour, salt, and pepper.
Shaping the Pancakes
  1. Shape the mixture into small, flat pancakes by hand.
Cooking the Pancakes
  1. Preheat the air fryer to 375°F (190°C) and lightly spray the basket with oil.
  2. Place the pancakes in a single layer in the basket, leaving space between them.
  3. Cook for 10-12 minutes, flipping halfway through until golden and crispy.

Notes

Serve with applesauce or sour cream for an authentic experience. For added flavor, try incorporating garlic powder or fresh herbs.
