For the Meatballs
  • 1 lb ground chicken Use lean chicken
  • 1 onion, grated Helps keep meatballs moist
  • 1 cup feta cheese, crumbled Adds creaminess and flavor

  • 2 tbsp olive oil Enhances flavor and moisture

For the Lemon Orzo
  • 1 cup orzo pasta Small pasta also used in soups
  • 4 cups chicken broth Use to cook the orzo
  • 1 lemon zest and juice Adds brightness to the dish
  • 1 tbsp dill, additional for garnish To finish the dish

Method
 

Prepare the Meatballs
  1. In a large mixing bowl, combine ground chicken, grated onion, crumbled feta, chopped dill, olive oil, salt, and pepper.
  2. Mix until just combined, then form into meatballs of desired size.
Cook the Meatballs
  1. Heat a large skillet over medium heat and add a little olive oil.
  2. Add the meatballs to the skillet and sear on all sides until browned and cooked through, about 10-12 minutes.
Make the Lemon Orzo
  1. In the same skillet, add chicken broth and bring to a simmer.
  2. Add orzo and lemon zest to the simmering broth.
  3. Cook orzo as per package instructions until tender, about 8-10 minutes.
Combine and Serve
  1. Once orzo is cooked, squeeze lemon juice over the mixture and mix gently.
  2. Serve meatballs atop the orzo and garnish with additional dill.

Notes

For extra flavor, serve with tzatziki and a simple Greek salad alongside.
