Prepare the Meatballs
- In a large mixing bowl, combine ground chicken, grated onion, crumbled feta, chopped dill, olive oil, salt, and pepper.
- Mix until just combined, then form into meatballs of desired size.
Cook the Meatballs
- Heat a large skillet over medium heat and add a little olive oil.
- Add the meatballs to the skillet and sear on all sides until browned and cooked through, about 10-12 minutes.
Make the Lemon Orzo
- In the same skillet, add chicken broth and bring to a simmer.
- Add orzo and lemon zest to the simmering broth.
- Cook orzo as per package instructions until tender, about 8-10 minutes.
Combine and Serve
- Once orzo is cooked, squeeze lemon juice over the mixture and mix gently.
- Serve meatballs atop the orzo and garnish with additional dill.
Notes
For extra flavor, serve with tzatziki and a simple Greek salad alongside.
