Preparation
- In a bowl, mix together olive oil, lemon juice, lemon zest, roasted garlic, smoked paprika, oregano, and thyme to create the marinade.
- Cut chicken thighs into bite-sized pieces and add to the marinade. Toss to coat the chicken well.
- Cover and let marinate in the refrigerator for at least 30 minutes, up to 2 hours for best flavor.
- Soak wooden skewers in water for at least 1 hour before grilling.
Grilling
- Prepare a two-zone grill: a hot side for searing and a cooler side for finishing.
- Thread the marinated chicken onto the soaked skewers.
- Sear skewers on the hot side of the grill until browned, about 2-3 minutes per side.
- Move skewers to the cooler side of the grill and close the lid. Cook until the internal temperature reaches 165°F.
Serving
- Once cooked, remove skewers from the grill and let rest for a few minutes.
- Serve warm, optionally with pita bread and a side salad.
Notes
For a more aromatic experience, consider adding a splash of white wine or sprigs of rosemary to the soaking water for skewers. Meat thermometers can help you pull the chicken off the heat at the perfect time.
