For the Skewers
  • 1 pound boneless skinless chicken thighs Offers a moist texture on the grill.
  • 4 wooden skewers soaked in water for 1 hour Prevents burning during cooking.

Method
 

Preparation
  1. In a bowl, mix together olive oil, lemon juice, lemon zest, roasted garlic, smoked paprika, oregano, and thyme to create the marinade.
  2. Cut chicken thighs into bite-sized pieces and add to the marinade. Toss to coat the chicken well.
  3. Cover and let marinate in the refrigerator for at least 30 minutes, up to 2 hours for best flavor.
  4. Soak wooden skewers in water for at least 1 hour before grilling.
Grilling
  1. Prepare a two-zone grill: a hot side for searing and a cooler side for finishing.
  2. Thread the marinated chicken onto the soaked skewers.
  3. Sear skewers on the hot side of the grill until browned, about 2-3 minutes per side.
  4. Move skewers to the cooler side of the grill and close the lid. Cook until the internal temperature reaches 165°F.
Serving
  1. Once cooked, remove skewers from the grill and let rest for a few minutes.
  2. Serve warm, optionally with pita bread and a side salad.

Notes

For a more aromatic experience, consider adding a splash of white wine or sprigs of rosemary to the soaking water for skewers. Meat thermometers can help you pull the chicken off the heat at the perfect time.
