Preparation
- Preheat your oven to 400°F.
- In a mixing bowl, toss together flour, baking powder, salt, and pepper. No fancy whisking, just mix with a fork.
- Cut in the cold butter—use your fingers if you have to. Tiny pea-size chunks are the move.
- Stir in cheese and ham.
- In another bowl, quickly whisk the milk and eggs, then mix that right into the flour-butter mixture until just combined (don’t overthink it, just don’t stir forever).
- Plop the dough onto a baking sheet and shape it into a fat circle. Cut into 8 wedges, kinda like pizza slices.
Baking
- Space the wedges out a bit and bake for 18 to 22 minutes, until golden and puffed.
Notes
These scones are incredibly versatile; feel free to switch up the filling with bacon or scallions. Serve warm, ideally with butter or as a breakfast sandwich.
