Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour just regular stuff, nothing fancy
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper to taste
Wet Ingredients
  • 1 stick unsalted butter, cold important! you want the flaky thing
  • 2/3 cup milk good ol' 2% or whole, but honestly, whatever you drink
  • 2 large eggs
Fillings
  • 3/4 cup shredded sharp cheddar cheese it HAS to be sharp, trust me
  • 1/2 cup diced ham leftovers? deli ham? Whatever’s hanging out in your fridge

Method
 

Preparation
  1. Preheat your oven to 400°F.
  2. In a mixing bowl, toss together flour, baking powder, salt, and pepper. No fancy whisking, just mix with a fork.
  3. Cut in the cold butter—use your fingers if you have to. Tiny pea-size chunks are the move.
  4. Stir in cheese and ham.
  5. In another bowl, quickly whisk the milk and eggs, then mix that right into the flour-butter mixture until just combined (don’t overthink it, just don’t stir forever).
  6. Plop the dough onto a baking sheet and shape it into a fat circle. Cut into 8 wedges, kinda like pizza slices.
Baking
  1. Space the wedges out a bit and bake for 18 to 22 minutes, until golden and puffed.

Notes

These scones are incredibly versatile; feel free to switch up the filling with bacon or scallions. Serve warm, ideally with butter or as a breakfast sandwich.
