  • ½ cup Cottage cheese Full-fat for creaminess
  • 2 tbsp Maple syrup or honey Honey if you prefer
  • 1 tsp Vanilla extract Real deal always best
  • ¾ cup Oat flour Add to reach desired doughiness
  • 2 tbsp Almond butter or peanut butter Peanut or almond, both work
  • Pinch Salt
  • 2-3 tbsp Mini dark chocolate chips Dark or regular

Method
 

Preparation
  1. Blend cottage cheese, maple syrup, and vanilla until smooth.
  2. In a bowl, combine oat flour, nut butter, and salt.
  3. Mix in the cottage cheese blend until dough forms.
  4. Fold in chocolate chips.
  5. Scoop and roll into 12 bite-sized balls.
  6. Chill for 30 minutes before serving.

Notes

Store in the fridge for up to 5 days or freeze for longer storage. Adjust sweetness by adding more or less maple syrup. Use dairy-free chocolate and nut butter for a vegan option.
